Two weeks ago, I set out to find the perfect dairy-free ice cream recipe. I naturally gravitated towards almond milk ice cream as that is the milk substitute we keep on hand at all times. I have to be honest and say I was not expecting this to turn out. At least not at first. I did a lot of research though and by the time I put together this recipe I was fairly sure it would at least be edible, but I was not sure it would actually taste like real ice cream.
I was pleasantly surprised. VERY pleasantly. This recipe was absolutely delicious. When I opened my ice cream maker to sample I was blown away by how creamy this almond milk ice cream was. Like even more creamy than normal ice cream. THEN, of course, I got distracted and over-churned my ice cream.* The Taste Tester was un-impressed with his first sample, as it tasted pretty rubbery due to being over-churned. I LOVE nachos. Like it might be my desert island food. If I am going to a desert island, I am choosing between popcorn, ice cream, or nachos. Popcorn might get old and ice cream might not last long given the whole desert thing. So yah, nachos. So versatile! So many ways to eat them, I would never ever tire of them.
And most nacho toppings are not all that bad for you. The meats tend to be lean, beans, veggies, salsa, maybe a little cheese (or maybe a lot!). But really, if it wasn’t for all those pesky chips, I could eat nachos every day! So that got me thinking, how could I make nachos sans chips? Enter bell pepper nachos. This buffalo chicken Greek yogurt Alfredo is the absolute ultimate I have nothing in the pantry meal. Maybe this isn’t the case for you, but Frank’s hot sauce and Greek yogurt are absolute staples in my house. We (or rather the taste tester’s incredible mom) buy Frank’s in three packs at Costco and I always have a very large container of yogurt in my fridge. I would not be caught without either of them.
